Two-Banana BreadThe next morning I also tried making banana bread french toast by dipping the mixture in egg and milk before frying it in some oil (I was too lazy to pull the butter out from the fridge). It wasn't anything to write home about, really... it intensified the banana flavour a bit, which was nice. As you can see, I fried the leftover "batter" and had a grapefruit as well... It's kind of ridiculous how many medications you can't take grapefruit with (something about components of the juice that affect the metabolism of these medications in the blood, causing toxicity)... but that's another story.
Makes 1 5"x9" loaf
- 2 bananas, mashed
- 90 mL (3/8 cup) vegetable oil or unsweetened applesauce
- 5 mL (1 tsp) vanilla extract
- 2 eggs, beaten
- 330 mL (1 1/3 cup) whole wheat flour (obviously all-purpose is fine)
- 2 mL (½ tsp) baking soda
- 1 mL (¼ tsp) baking powder
- 160 mL (2/3 cup) sugar
- 2 mL (½ tsp) salt
- 60 mL (¼ cup) each chocolate chips and chopped walnuts
- Preheat oven to 175°C (350°F). Grease and flour loaf pan.
- In a medium bowl, mix bananas, vegetable oil, vanilla and eggs together until smooth.
- In a large bowl, mix together flour, baking soda, baking powder, sugar, and salt.
- Add wet ingredients to dry ingredients until everything is moistened.
- Fold in chocolate chips and walnuts.
- Pour the batter into the prepared loaf pan and bake for 55 minutes, or until a toothpick inserted in the centre comes out clean.
- Cool for 10 minutes before removing from the pan (this is important! Many a time I have been impatient and turned the loaf pan over too early, causing part of the loaf to fall out and part of it to remain in the pan... reconstructive surgery for banana bread is not very classy.)

I adapted this recipe from another food blog--Cooking for Engineers. I like to call this recipe Two-Banana Bread as I have another recipe (most likely from another food blog) that calls for three ;)
